Tasty Tuesday--Puff Pancake (German Pancake)

I LOVE a German Baby Cake…even though it’s something that I have to crave. It has an interesting texture, almost custard like but maybe a little firmer? It’s interesting. Most people eat it with lemon juice and powdered sugar! YUUM!
You can also use peanut butter and syrup or applesauce, whatever you prefer but I definitely recommend trying it with the lemon (and I use stevia).

3 Eggs, 1/2 cup flour, 1/2 cup milk, 1/4 teaspoon salt, and 2 tablespoons butter.

Heat the oven to 400 degrees. Set a 9″ pie dish onto lowest shelf until very hot. In the meantime, mix all your ingredients (except the butter) together in a blender or food processor until smooth.
Then take out your dish and add your butter, rotate until completely melted. Add your batter immediately and put back into the oven on the lowest shelf for 20 minutes or until golden. It WILL puff up!
Let it cool for a little bit but enjoy something different and easy! It’s about 4 servings. ENJOY!!!
